Super succulent sirloin steak with chimichurri ready in minutes!
Prep Time :5 minutes
Cook Time :6 minutes
Total Time :11 minutes
Servings: 4

INGREDIENTS

Chimichurri:

  • ½ cup red wine vinegar
  • 1 teaspoon coarse salt
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 red chili pepper, finely chopped (adjust to your spice preference)
  • ½ cup cilantro, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 2 tablespoons fresh oregano, finely chopped
  • ¾ cup olive oil

INSTRUCTIONS

  • Combine the chimichurri ingredients in a bowl and set aside.
  • Preheat a griddle/frying pan over medium- high heat. Place the steaks on a plate/cutting board. Season the steaks generously with coarse salt and ground black pepper on both sides. Ensure you pat the seasoning onto the meat for better adherence.
  • Lay the seasoned steaks on the hot grill. Sear for about 3 minutes on each side, or until you reach your preferred level of doneness. For a medium-rare steak, aim for an internal temperature of around 130-135°F (54-57°C).
  • Remove the steaks from the grill and allow them to rest for a few minutes. For proper slicing, use a sharp knife to cut them thinly against the grain. Finally, drizzle chimichurri sauce over the sliced steaks.

Sides to make for sirloin steak with chimichurri

Classic choices include grilled vegetables like asparagus or bell peppers, which add a smoky charred flavor. Creamy mashed potatoes provide a satisfying contrast to the zesty chimichurri. For a lighter option, a crisp salad with fresh greens, tomatoes, and a citrus vinaigrette can balance the richness of the steak. Don’t forget about crusty bread or garlic bread to mop up any leftover sauce.

Can I make the chimichurri sauce in advance?

Yes, you can absolutely prepare chimichurri sauce in advance. In fact, making it ahead often enhances the flavors as the ingredients meld together over time. Store the chimichurri sauce in an airtight container in the refrigerator for up to a week. Before serving, allow it to come to room temperature and give it a good stir. This way, the sauce retains its vibrant taste and can be readily drizzled over your sirloin steak when it’s ready to be enjoyed.

Can I marinate the sirloin steak with chimichurri?

While it’s not the traditional use of chimichurri, marinating the steak in this zesty sauce can infuse it with bold flavors. Place the steak and chimichurri in an airtight container or sealable bag, ensuring the meat is well-coated, and refrigerate for several hours or overnight. However, be mindful of marinating times, as the acidity in chimichurri can affect the meat’s texture if left too long.
