Cheesy Sweet Potato Fritters

For lunch or dinner, these sweet potato fritters are a crazy delicious meal!

INGREDIENTS
 

  • 2 large sweet potatoes, grated
  • 1 white onion, grated
  • 3 eggs
  • tablespoons flour or gluten free all purpose flour / almond flour / potato flour / rice flour / quinoa flour
  • tablespoons bread crumbs / gluten free bread crumbs
  • ½ bunch parsley, chopped
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon nutmeg
  • A handful of grated cheddar cheese
  • Oil for frying

INSTRUCTIONS

  • Mix the sweet potatoes, onion and cheese in a bowl. Add the flour, bread crumbs, eggs and spices and mix/whisk until well combined.
  • Heat up a frying pan on medium-high heat and add 1" oil.
