  • Preheat the oven to 355 ℉ (180 ℃).
  • Mix all the filling ingredients in a bowl.
  • Spray each muffin cup with oil and place a filo sheet half inside each muffin cup (as shown in the video).
  • Pour the filling mixture into each cup until it is almost full.
  • Place two cherry tomato halves on each cup and bake for about 20 minutes, or until the filo turns golden.
  • Remove from the oven, sprinkle thyme and serve!
