Butter Parmesan Pasta

This butter parmesan pasta is super easy and simple to make, yet insanely delicious and satisfying!
Servings: 2

INGREDIENTS
 

  • 1.1 pound/450 grams your favorite pasta
  • tablespoons/50 grams butter
  • 1 tablespoon olive oil
  • 2 garlic cloves, thinly sliced
  • 2 ladles-full pasta water
  • cups/80 grams parmesan, finely grated
  • 1 coarse salt
  • 1 flat teaspoon ground black pepper
  • ¼ teaspoon ground nutmeg

INSTRUCTIONS

  • Cook the pasta in boiling, generously salted water.
  • Heat up a deep frying pan on medium-low heat. Add the butter, olive oil and garlic and fry for 1-2 minutes.
  • Add the pasta water, black pepper and nutmeg and bring to a boil.
  • When the sauce is bubbling, add the parmesan, mix well and thicken the sauce for 2-3 minutes.
  • Taste to see if it needs more salt.
  • Add the pasta to the sauce and cook for 5 minutes on high heat until the sauce is reduced and only covers the pasta. Add more parmesan, if you like 🙂
