INGREDIENTS
 

Kebabs:

  • 1.1 pounds/500 grams ground beef, ribs/neck or ground lamb
  • 1¾ ounces/50 grams lamb fat, optional
  • 5 tablespoons oil
  • 1 finely chopped onion
  • 1 bunch finely chopped parsley
  • ½ bunch finely chopped cilantro
  • 1 teaspoon coarse salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon baharat, you can also substitute with cumin
  • 1 tablespoon baking powder

Wings:

  • 1.75 pounds/800 grams chicken wings
  • 1 tablespoon grill seasoning
  • 1 teaspoon turmeric
  • 1 teaspoon sweet paprika
  • 3 tablespoons your favorite chili sauce
  • 1 flat teaspoon coarse salt
  • 2 tablespoons oil

Skewers:

  • 10.5 ounces/300 grams chicken breast, cut into strips
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon grill seasoning
  • ¼ teaspoon ground black pepper
  • ½ teaspoon coarse salt

INSTRUCTIONS

Kebabs:

  • Mix all the ingredients together, ensuring the mixture is well combined, and shape it into kebab patties. It is recommended to let the mixture rest for about an hour. Heat a griddle pan/outdoor grill and cook the kebabs for about 2 minutes on each side.

Wings:

  • Mix everything together and place the chicken wings on the pan, cooking for about 10 minutes on each side over medium-high heat.

Skewers:

  • Mix everything together and thread the chicken strips accordion-style. Place them on the pan and cook for about 3 minutes on each side.
