One Pan Green Curry Salmon with Green Beans

EQUIPMENT

INGREDIENTS
 

  • 2 pounds/1 kilogram salmon fillets
  • 8 tablespoons oil
  • 2 heaping tablespoons green curry paste
  • 1 lemongrass stalk, cut in half
  • 3 slices ginger
  • 4 kaffir lime leaves, optional
  • 4 shallots, sliced
  • 1 can, 13.5 ounces coconut cream
  • 1 tablespoon brown sugar
  • A pinch of salt
  • Juice from ½ lime
  • 2 cups green beans, fresh/frozen
  • Chopped cilantro for garnish

INSTRUCTIONS

  • Heat a pan and add 4 tablespoons of oil. Place the salmon and add a pinch of salt. Fry for about 2-5 minutes on each side, or until it is cooked to your liking. Transfer to a plate.
  • In the same pan, add 4 tablespoons of oil and the green curry paste. Fry for about a minute until fragrant. Add the ginger, lemongrass, and kaffir lime leaves (if using), and mix.
  • Pour in the coconut cream, stir well, and let it cook for 2 minutes. Add the brown sugar and lime juice, and mix until the sugar is dissolved. Add the green beans and simmer for 4 minutes.
  • Place the salmon on top of the sauce and beans. Cook for an additional 4 minutes or until the salmon is heated through and the beans are tender. Garnish with fresh cilantro leaves.

What can I substitute for green curry paste if I can’t find it?

If you can’t find green curry paste, you can substitute it with a homemade blend of ground coriander, cumin, green chili peppers, garlic, ginger, and lemongrass.

Can I use regular lime leaves instead of kaffir lime leaves?

While you can use regular lime leaves as a substitute for kaffir lime leaves, they have a slightly different flavor profile. Kaffir lime leaves have a more intense and distinct citrusy aroma. If you use regular lime leaves, you may need to use a larger quantity to achieve a similar flavor. Adjust to taste, but the dish will still be delicious with the substitution.

Can I use canned green beans to make this green curry salmon?

Using canned green beans is acceptable in this recipe, but they may have a softer texture than fresh or frozen ones. Drain and rinse the canned beans before adding them to the dish. Keep in mind that the cooking time may need to be reduced as canned green beans are pre-cooked. Adjust accordingly to ensure they are heated through without overcooking.
