INGREDIENTS
- 1 head of lettuce, stem removed and leaves separated
- 1 cucumber, sliced
- ½ purple onion, thinly sliced
- A handful of colorful cherry tomatoes, halved
- A handful of hazelnuts, chopped
- A handful of cherries or cranberries
- 6-8 slices of goat cheese, or crumbled feta
Dressing:
- 5 mint leaves, finely chopped
- 1 tablespoon honey
- 2 tablespoons fresh lemon juice
- 1 tablespoon balsamic vinegar
- 1 teaspoon coarse salt
- ¼ cup extra virgin olive oil
INSTRUCTIONS
- Separate the lettuce leaves, wash them, and place them in a wide bowl or plate. Arrange the cucumber slices, cherry tomatoes, and purple onion on top of the lettuce.
- Sprinkle chopped hazelnuts and cherries/cranberries over the salad and add the goat cheese on top. In a separate container, mix together the mint leaves, honey, lemon juice, balsamic vinegar, salt, and extra virgin olive oil to make the dressing. Pour the dressing over the salad and serve.
