INGREDIENTS
 

  • 1 head of lettuce, stem removed and leaves separated
  • 1 cucumber, sliced
  • ½ purple onion, thinly sliced
  • A handful of colorful cherry tomatoes, halved
  • A handful of hazelnuts, chopped
  • A handful of cherries or cranberries
  • 6-8 slices of goat cheese, or crumbled feta

Dressing:

  • 5 mint leaves, finely chopped
  • 1 tablespoon honey
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon coarse salt
  • ¼ cup extra virgin olive oil

INSTRUCTIONS

  • Separate the lettuce leaves, wash them, and place them in a wide bowl or plate. Arrange the cucumber slices, cherry tomatoes, and purple onion on top of the lettuce.
  • Sprinkle chopped hazelnuts and cherries/cranberries over the salad and add the goat cheese on top. In a separate container, mix together the mint leaves, honey, lemon juice, balsamic vinegar, salt, and extra virgin olive oil to make the dressing. Pour the dressing over the salad and serve.
