  • Combine all the vegetables in a strainer and drain the liquid. Add the parsley, eggs, breadcrumbs, seasoning, and mix well.
  • Heat up a frying pan with 1/4 of an inch of oil. Using a tablespoon, create the fritters and place them in the oil. Fry for 3 minutes on each side. Serve with tahini or your favorite dip.

After preparing and frying the fritters, allow them to cool to room temperature. Then, place them on a baking sheet and store them in the refrigerator for up to a day. To reheat, preheat your oven to around 350°F (175°C) and place the fritters on a baking sheet. Bake for about 10-15 minutes, or until they are heated through and crispy. Alternatively, you can reheat them in a toaster oven or on a stovetop skillet with a little oil for a few minutes on each side.

Can I bake these vegetables fritters for a healthier option?

Certainly! To do so, preheat your oven to around 375°F (190°C) and line a baking sheet with parchment paper. Place the fritters on the sheet and lightly brush or spray them with oil to achieve a crispy exterior. Bake for approximately 20-25 minutes, flipping them once midway through, or until they’re golden brown and cooked through.

Tips for making fried vegetable fritters extra crispy

Using a high-quality oil with a high smoke point, such as vegetable or canola oil, at the right temperature (around 350°F or 175°C) is crucial for achieving a crisp exterior. Avoid overcrowding the pan while frying to allow the fritters to cook evenly, and don’t flip the fritters too frequently; let them cook undisturbed for a few minutes on each side to develop a nice, golden crust.
