INGREDIENTS
- 1 pound/450 grams frozen/fresh cauliflower
- 2 squashes, diced
- 1 onion (for shallots, use 3-4), diced
- 1 tablespoon olive oil for greasing the baking dish
- ½ cup your favorite cheese, shredded
Batter:
- 3 eggs
- 3 heaping tablespoons ricotta cheese, similar to cottage cheese
- ½ cup low fat cream
- 1 flat teaspoon coarse salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg
- ¼ teaspoon garlic powder
- 1 tablespoon olive oil
INSTRUCTIONS
- Preheat the oven to 355F (180C).
- Grease the baking dish with oil and arrange the cauliflower, squash, and onion inside.
- In a separate bowl, combine the batter ingredients. Pour over the vegetables, sprinkle shredded cheese and bake for about 50 minutes.
