INGREDIENTS
- 2 cups almond flour or almond meal
- 1 cup almonds / hazelnuts / pecans, chopped
- 2 cups potato flour / cornstarch
- 2 eggs
- ¾ cup oil
- ¾ cup your preferred sweetener (sugar, maple, monk fruit etc.)
- Powdered sugar or monk fruit powdered sweetener for dusting, optional
INSTRUCTIONS
- Preheat the oven to 355F (180C).
- Combine all the ingredients together and form a dough. Create small round-shaped cookies (you can make them any size you prefer) and bake for 15 minutes or until they turn golden.
- Allow the cookies to cool on the countertop, then dust them with powdered sugar and serve!
