INGREDIENTS
- 4 large sweet potatoes, thoroughly washed and dried
- 2 cups shredded mozzarella
- 2 cups gouda, cubed
- 2 button mushrooms, sliced
- ½ cup olive oil
- 1 teaspoon coarse salt
- ½ teaspoon pepper
- ¼ teaspoon nutmeg, optional

- Basil leaves
- Yogurt
INSTRUCTIONS
- Preheat the oven to 480°F (250°C).
- Coat the sweet potatoes with a small amount of salt and olive oil, wrap them in tin foil, and bake for 45 minutes to an hour.
- In a bowl, combine all the remaining ingredients. Once the potatoes are ready (keeping the oven temperature at 390°F/200°C), use a knife to make a lengthwise cut in each potato. Fill each potato generously with the cheese mixture, and return them to the oven for approximately 15 minutes or until the cheese turns golden brown.
- Once the potatoes are finished baking, drizzle some yogurt over them and garnish with a few basil leaves.
