4large sweet potatoes, thoroughly washed and dried
2cupsshredded mozzarella
2cupsgouda, cubed
2button mushrooms, sliced
½cupolive oil
1teaspooncoarse salt

INSTRUCTIONS
Preheat the oven to 480°F (250°C).
Coat the sweet potatoes with a small amount of salt and olive oil, wrap them in tin foil, and bake for 45 minutes to an hour.
In a bowl, combine all the remaining ingredients. Once the potatoes are ready (keeping the oven temperature at 390°F/200°C), use a knife to make a lengthwise cut in each potato. Fill each potato generously with the cheese mixture, and return them to the oven for approximately 15 minutes or until the cheese turns golden brown.
Once the potatoes are finished baking, drizzle some yogurt over them and garnish with a few basil leaves.
