INSTRUCTIONS

  • Heat olive oil in a sauté pan and fry the chicken on both sides until golden. Remove the chicken and set aside.
  • In the same pan, add the onions and sauté until golden, adding a little more olive oil if needed. Once the onions are caramelized, add the date syrup, salt, and black pepper, and remove from heat.
  • Arrange the potato slices tightly at the bottom of the pan. Add the grated sweet potato and rice to the fried onions and mix well. Spread this mixture over the potatoes. Arrange the chicken pieces on top of the mixture. Mix all the sauce ingredients together and pour over everything in the pan. Cover with a lid and bake in a preheated oven at 375°F (190°C) for 50 minutes.
  • Remove the lid, drizzle a little date syrup, and continue baking uncovered for about 15 minutes or until the liquids have reduced and the chicken is golden. Serve hot. This dish can be prepared in advance and reheated before serving.
