  • 9 ounces/250 grams ricotta cheese
  • 7-9 ounces/200-250 grams vacuum-packed beets, save the liquid
  • Fresh basil
  • 1 garlic clove, pressed
  • ½ lemon, juiced
  • ½ teaspoon salt
  • teaspoon pepper

Toppings:

  • Fresh basil
  • Parmesan cheese, grated/shredded

INSTRUCTIONS

  • Cook the pasta according to the instructions on the package.
  • Meanwhile, blend all the sauce ingredients in a blender.
  • Drain the pasta, add the sauce, and garnish with fresh basil and Parmesan cheese.
