INGREDIENTS
Pesto:
- 1 cup fresh basil
- 1 solo garlic (or 2 garlic cloves)
- ⅓ cup olive oil
- ⅓ cup parmesan
- ¼ cup walnuts
Salad:
- 1 pound/500 grams cherry tomatoes, cut into halves
- ½ red onion, chopped
- ½ cup roasted pine nuts
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons olive oil
- Balsamic glaze
- Baby mozzarella
INSTRUCTIONS
- Process all the pesto ingredients until you get a smooth texture.
- Combine tomatoes, onion, salt, pepper and oil in a bowl.
- Spread 2 tablespoons of pesto on a large plate. Add the tomato-onion mixture, drizzle some pesto and top with mozzarella balls, balsamic glaze and pine nuts.
