INGREDIENTS
 

Pesto:

  • 1 cup fresh basil
  • 1 solo garlic (or 2 garlic cloves)
  • cup olive oil
  • cup parmesan
  • ¼ cup walnuts

Salad:

  • 1 pound/500 grams cherry tomatoes, cut into halves
  • ½ red onion, chopped
  • ½ cup roasted pine nuts
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • Balsamic glaze
  • Baby mozzarella

INSTRUCTIONS

  • Process all the pesto ingredients until you get a smooth texture.
  • Combine tomatoes, onion, salt, pepper and oil in a bowl.
  • Spread 2 tablespoons of pesto on a large plate. Add the tomato-onion mixture, drizzle some pesto and top with mozzarella balls, balsamic glaze and pine nuts.
