Colorful Root Vegetable Salad

A healthy root vegetable salad is a great way to have a filling and nutritious lunch, that'll also refresh your energy for the rest of the day.

Servings: 6 servings


  • ¼ cabbage (white or red), chopped
  • 1 kohlrabi, cut into strips
  • 1 beet, cut into strips
  • 1 carrot, cut into strips
  • ½ cup celery leaves, finely chopped


  • 4 tablespoons olive oil
  • ½ lemon, squeezed
  • 2 teaspoons soy sauce
  • 2 teaspoons honey
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper


  • ½ teaspoon toasted black sesame seeds


  • Add all the vegetables and celery leaves to a large salad bowl.
  • Mix all the dressing ingredients separately and pour over the vegetables.
  • Toss until well combined and sprinkle black sesame seeds.
