Colorful Root Vegetable Salad

INGREDIENTS
- ยผ cabbage (white or red), chopped
- 1 kohlrabi, cut into strips
- 1 beet, cut into strips
- 1 carrot, cut into strips
- ยฝ cup celery leaves, finely chopped
Dressing:
- 4 tablespoons olive oil
- ยฝ lemon, squeezed
- 2 teaspoons soy sauce
- 2 teaspoons honey
- 1 teaspoon sesame oil
- ยฝ teaspoon salt
- ยผ teaspoon ground black pepper
Topping:
- ยฝ teaspoon toasted black sesame seeds
INSTRUCTIONS
- Add all the vegetables and celery leaves to a large salad bowl.
- Mix all the dressing ingredients separately and pour over the vegetables.
