Fancy Egg Salad

INGREDIENTS
- 4 hard boiled eggs, finely grated/chopped
- 2 tablespoons mayonnaise
- 1 leek (green part removed) / onion, finely chopped
- 1 scallion, chopped
- ยฝ teaspoon cumin (optional)
- ยฝ teaspoon ground black pepper
- ยฝ teaspoon kosher salt
- 1 cup frying oil
INSTRUCTIONS
- Heat up the oil in a deep frying pan. Deep frying temperature is between 325 to 375 ยฐF (163 to 190 ยฐC). Fry the leek until golden.
- Combine all the salad ingredients in a bowl and mix well.
