Honey Nut Passover Granola

INGREDIENTS
- 4 matzot, crushed
- 2 cups assorted nuts, chopped
- ½ cup coconut flakes
- 1 teaspoon cinnamon
Syrup:
- ¾ cup honey
- ¼ cup oil
INSTRUCTIONS
- Combine the matzos, walnuts, coconut flakes and cinnamon in a bowl.
- Preheat the oven to 320-340 °F (160-170 °C).
- In a small pot, combine the honey and oil and bring to a boil. Pour over the matzo mixture and stir.
- Transfer to a sheet pan lined with parchment paper and spread evenly. Bake for 20 to 30 minutes, or until brown. Mix every 10 minutes to allow even baking.
- Remove from the oven and let it cool off, then transfer to a container.
