Combine the matzos, walnuts, coconut flakes and cinnamon in a bowl.
Preheat the oven to 320-340 °F (160-170 °C).
In a small pot, combine the honey and oil and bring to a boil. Pour over the matzo mixture and stir.
Transfer to a sheet pan lined with parchment paper and spread evenly. Bake for 20 to 30 minutes, or until brown. Mix every 10 minutes to allow even baking.
Remove from the oven and let it cool off, then transfer to a container.
