  • Large and wide oven-safe pot + lid

INGREDIENTS
 

  • 8-10 chicken drumsticks
  • ¾ pound/300 grams pumpkin, cut into large cubes
  • A handful of dried plums, apricots, and raisins
  • 2 onions, sliced into strips

Sauce:

  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 2 tablespoons brown sugar or date syrup

INSTRUCTIONS

  • In a wide pot, heat olive oil and sauté the onions and chicken drumsticks together until they turn golden brown.
  • Add the dried fruits and spices, and stir to release the flavors. Add enough water to almost completely cover everything, then cover the pot with a lid and simmer over medium heat for 30 minutes.
  • Preheat the oven to 340°F (170°C).
  • Uncover the pot, add the pumpkin, and bake for an additional 30 minutes using the turbo mode.
