Mediterranean Baked Fish and Chips

INGREDIENTS
Chips:
- 3 potatoes, cut into ½" slices
- 1 bunch dill, chopped
- 4 scallions, chopped
- 3 garlic cloves, pressed
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup oil
Fish:
- 3 whole fish (the fish used in the video is a Gilt-head bream), with 3 horizontal cuts on each side
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup olive oil
INSTRUCTIONS
- Preheat the oven to 430 F (220 C).
- Mix all the chips ingredients in a bowl.
- Line up a sheet pan with parchment paper and spread the chips evenly.
- Bake them on the upper rack until they brown.
- Add the fish, drizzle the oil and sprinkle salt and pepper, then bake on the middle rack for about 20 minutes.
