Tunisian Grilled Salad Delicacy (Salata Mashwiya)

- Medium size ceramic or glass baking pan
INGREDIENTS
- 2 tomatoes, cut in halves
- 2 green chili peppers, cut into chunks
- 1 red bell pepper, cut into 4 pieces
- 1 garlic head
- 2 tablespoons olive oil
- 1 pinch kosher salt, or more to taste
INSTRUCTIONS
- Preheat the oven to 480 °F (250 °C).
- Place the vegetables in the pan and add oil and salt.
- Mix lightly and bake for 45 minutes, or until the vegetables are charred.
- Remove the pan from the oven and let it cool off for 5 minutes.
- Squeeze the garlic cloves out of their peel and chop them along with the rest of the vegetables. Place in a salad bowl.
- Add the oil from the pan, mix and taste. You can add more salt to your taste.
