Cheesy Zucchini Patties
A great last-minute appetizer for your weekend family dinner. These cheesy zucchini patties will make everyone go crazy when they see them on the table!

INGREDIENTS
- 1½ cups zucchini, grated
- 4 tablespoons bread crumbs / gluten free breadcrumbs
- ½ teaspoon salt
- ¾ cup dairy / dairy free mozzarella, grated
- 1 large egg (egg substitute: combine 1 tablespoon ground flax seeds + 1½ tablespoons water and set aside for 5 minutes)
- 1½ cups avocado oil
INSTRUCTIONS
- Mix the grated zucchini, breadcrumbs and salt in a bowl. Add the mozzarella and the egg and keep mixing. If there is too much liquid in the mixture, add a handful of breadcrumbs and mix.
- Heat a frying pan over medium heat and add the oil. Form little patties and fry them for about 2 minutes on each side, or until they start to brown.
