Cheesy Sweet Potato Fritters

INGREDIENTS
- 2 large sweet potatoes, grated
- 1 white onion, grated
- 3 eggs
- 2½ tablespoons flour or gluten free all purpose flour / almond flour / potato flour / rice flour / quinoa flour
- 2½ tablespoons bread crumbs / gluten free bread crumbs
- ½ bunch parsley, chopped
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon nutmeg
- A handful of grated cheddar cheese
- Oil for frying
INSTRUCTIONS
- Mix the sweet potatoes, onion and cheese in a bowl. Add the flour, bread crumbs, eggs and spices and mix/whisk until well combined.
- Heat up a frying pan on medium-high heat and add 1" oil.
