INGREDIENTS
Dough:
- 2.2 pounds/1 kilogram flour
- 2 tablespoons dry yeast
- 1 tablespoon coarse salt
- 2 tablespoon sugar
- ¼ cup oil
- 3½ tablespoons/50 grams soft butter
- 2 cups/480 milliliters milk
- ½-1 cup water
Cooking water:
- ½ gallon/2 liters boiling water
- ⅓ cup baking soda
- 1 tablespoon coarse salt
INSTRUCTIONS
- In a stand mixer bowl, combine all the dough ingredients except for the water.
- Add the water gradually while kneading. Continue to knead for about 7 minutes, then cover the bowl with a towel and let the dough rise for an hour.
- Divide the dough into 8 equal parts, flatten each part with a rolling pin and roll it as shown in the video. Cover the rolls with a towel and let them rise for 15 minutes.
- Preheat the oven to 355 °F (180 °C).
- Pour the boiled water into a wide pot over high heat and add the baking soda and salt. Place the rolls in the boiling cooking water, cook for one minute on each side, then transfer to a sheet pan covered with parchment paper.
- Create 3 diagonal cuts on top of each roll, sprinkle salt and bake for 20-25 minutes, or until the rolls brown.
