Blackberry Soy Wings

INGREDIENTS
Wings:
- 4 pounds/ 1.8 kilograms chicken wings
- â…“ cup olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon white pepper
Sauce:
- ½ onion, finely diced
- 2 garlic cloves, minced
- 1 tablespoon avocado oil
- 1 tablespoon lemongrass powder or 1 stalk fresh lemongrass, finely sliced
- 3 dried chilis
- ½ cup blackberry jam
- 1 teaspoon fish sauce
- 1 tablespoon rice vinegar
- 2 tablespoons dark soy sauce
- 2 tablespoons blackberry liqueur (optional)
Garnish:
- ½ bunch cilantro, chopped
- ¼ cup sesame seeds
INSTRUCTIONS
- Preheat the oven to 425 °F (220 °C) and mix together the salt, garlic powder and white pepper in a small bowl. Toss the wings with the olive oil and coat with the seasoning.
- On a parchment paper lined baking sheet fitted with a wire rack, arrange the wings skin side up evenly spaced apart. Bake for 30 minutes, until the skin has rendered and started to crisp up. Flip over to crisp the other side and bake for another 10-15 minutes. Don’t worry, they will not dry out.
- In a small saucepan, heat the avocado oil over medium heat. Add the onion and garlic (if using fresh lemongrass, add that now), saute 2-3 minutes until fragrant and slightly browned. If using lemon grass powder, add that now. Toast another 60 seconds. Add in the chilis, jam, vinegar, fish sauce, and dark soy sauce. Reduce heat to low and cook 5-8 minutes, until combined and has started to simmer.
- Add in the blackberry liqueur, and simmer another 3-4 minutes to burn off the alcohol and concentrate. If a thicker sauce is desired, mix together 1 tablespoon cornstarch with 2 tablespoons of water. Slowly add while bringing sauce to a boil until the desired thickness is reached.
- Toss the wings in the sauce and place back on the baking sheet and put under the broiler for another 3-4 minutes to caramelize the sauce. Remove and toss the wings again with whatever leftover sauce was in the bowl, return under the broiler for 2-3 minutes. Remove, wait 2-3 minutes for the juices to settle and enjoy! Garnish with cilantro leaves and sesame seeds.
