INGREDIENTS

  • 1.5 pounds/680 grams skinless salmon fillets, cubed
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon honey
  • 1 tablespoon ground sumac
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 ounces/115 grams feta cheese
  • 2 tablespoons Greek yogurt
  • 2 tablespoons olive oil
  • ½ cup mixed fresh herbs, such as parsley, cilantro and dill
  • 2 tablespoons fresh lemon juice
  • Pinch of salt

INSTRUCTIONS

  • Heat the oven to 425°F/220°C.
  • In a large bowl, toss the salmon with the olive oil, lemon juice, parsley, dill, honey, sumac, garlic powder, salt and pepper until evenly coated.
  • Arrange the salmon in a single layer on a parchment-lined baking sheet. Roast until just cooked through and lightly browned, 10 to 12 minutes. Broil for 1 to 2 minutes for deeper color.
