INGREDIENTS
 

Dough (8 rolls):

  • cups/500 grams wheat / whole wheat flour
  • 1 cup/240 milliliters water
  • 2 tablespoons sugar
  • 1 tablespoon dry yeast
  • ¼ cup oil
  • ¼ cup sriracha sauce
  • 1 teaspoon coarse salt

Filling:

  • 3 tablespoons oil
  • 1 medium onion, chopped
  • 6 garlic cloves, minced
  • 1 teaspoon coarse salt
  • 4 tablespoons sriracha sauce
  • 2.2 pounds/1 kilogram ground beef
  • 2 tablespoons parsley, chopped

Brush:

  • 1 egg yolk + 1 teaspoon water, mixed together
  • ¼ cup white sesame seeds
  • ¼ cup crushed red pepper

INSTRUCTIONS

  • Put the flour in a mixer bowl and create a hole in the middle. Add the water, sugar and yeast into the hole, mix gently and wait 5 minutes.
  • Add the oil, sriracha and salt and knead for about 5 minutes, or until the dough has formed. Cover the bowl with a kitchen towel and set aside for 30 minutes.
  • Heat the oil in a pan, then add the onion and garlic and sauté for 2 minutes.
  • Add the salt and Sriracha and mix. Add the meat, stir well until cooked and add parsley. Cover with a lid and cook for 5 minutes, or until there is no more liquid in the pan.
  • Preheat the oven to 350 F (180 C).
  • Divide the dough into 8 parts, then flatten each part into ½ an inch (1 centimeters thick) dough circle.
  • Place in a small bowl and add 3 tablespoons of the filling, as shown in the video. Tighten the edges of the dough and place on a sheet pan covered with parchment paper.
  • Brush with the egg yolk mixture and sprinkle a little sesame and crushed red pepper on top. Bake for 15-20 minutes until golden.
