Cook the pasta in boiling, generously salted water.
Heat up a deep frying pan on medium-low heat. Add the butter, olive oil and garlic and fry for 1-2 minutes.
Add the pasta water, black pepper and nutmeg and bring to a boil.
When the sauce is bubbling, add the parmesan, mix well and thicken the sauce for 2-3 minutes.
Taste to see if it needs more salt.
Add the pasta to the sauce and cook for 5 minutes on high heat until the sauce is reduced and only covers the pasta. Add more parmesan, if you like :)
