INGREDIENTS

  • 4 tablespoons soft butter
  • 4 tablespoons honey

Dough:

  • cups/500 grams flour
  • tablespoon/12 grams dry yeast
  • ½ cup/100 grams sugar
  • 2 eggs
  • ½ cup/120 milliliters milk
  • ¼ cup/60 grams water
  • cups/250 grams soft butter
  • ½ teaspoon salt

Filling:

  • 5 apples, peeled and cut into small cubes
  • ½ lemon, squeezed
  • 3 tablespoons sugar
  • 1 teaspoon Baharat
  • ½ teaspoon cinnamon

INSTRUCTIONS

Dough:

  • Add all the ingredients except for the butter to a stand mixer bowl and knead at a low speed until well combined.
  • Add the butter and salt and knead at medium speed for 7-10 minutes until the dough becomes smooth.
  • Sprinkle some flour in a bowl and transfer the dough into it. Cover the bowl with plastic wrap and refrigerate overnight.

The next day:

  • Mix all the filling ingredients in a bowl and pour into a strainer inside a bowl (save the liquid for later).
  • Take out the dough from the fridge, sprinkle flour on your working surface and divide the dough into 4 parts.
  • Roll each part out with a rolling pin to a thin rectangular layer. Brush it with soft butter or oil, add a layer of the filling on half of the it, drizzle honey and cover with the other half.
  • Flatten the filled dough with the rolling pin and roll into a tube-like shape. Cut it into 2" thick pieces and place them in a deep baking pan. Cover it and let rise for about 40 minutes.
  • Preheat the oven to 355 F (180 C ) and bake for 30 minutes, or until the rolls turn golden.
  • Heat up the liquid you set aside earlier and pour it over the rolls when they come out of the oven.
