INGREDIENTS
 

  • 6 bone-in chicken thighs
  • 4 sprigs fresh thyme
  • Sauce:
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon sweet paprika
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons date syrup
  • 1 teaspoon Dijon mustard
  • Juice of ½ lemon
  • 1 head garlic, cloves peeled

INSTRUCTIONS

  • Whisk the sauce ingredients in a bowl until smooth.
  • Arrange the chicken thighs in a baking dish, pour the sauce over them, and massage to coat evenly. Refrigerate for 1 hour.
  • Sprinkle thyme over the chicken.
  • Wet a sheet of parchment paper, place it over the chicken, and cover with aluminum foil.
  • Bake at 390°F/200°C for 1½ hours. Remove the cover and continue baking until the chicken is deeply golden and the sauce is sticky. Serve warm.
