INGREDIENTS
 

  • 1 pound/450 grams noodles
  • 3 garlic cloves, minced
  • 1 pound/450 grams 1 fresh green beans
  • 1 tablespoon red chili pepper, finely chopped (optional)
  • 2 tablespoons oil

Sauce:

  • 3 tablespoons peanut butter
  • 2 tablespoons teriyaki sauce
  • 2 tablespoons soy/tamari sauce
  • 3 tablespoons oil
  • ½ -¾ cup cooking water

Toppings:

  • 3 scallions, chopped
  • 3 cilantro stems
  • 4 tablespoons your favorite peanuts
  • Sweet and spicy chili sauce to taste

INSTRUCTIONS

  • Cook the noodles according to the instructions on the package. Strain and save a cup of the cooking water.
  • In a small bowl, mix the sauce ingredients until well combined (texture should be thick). Heat up a wok over medium, add the oil and fry the garlic for a minute. Add the green beans and saute for 4-5 minutes, until the beans are tender. Add the chili pepper and stir. Pour in the sauce and cooking water and mix until well combined.
  • Add the noodles and mix with tongs until they are completely covered with the sauce. Drizzle chili sauce to taste and sprinkle scallions, cilantro and peanuts. Enjoy!
