INGREDIENTS
 

  • 1 cup/140 grams almond flour
  • 3 tablespoons sugar
  • ½ teaspoon/2.5 grams baking powder
  • ½ teaspoon/2.5 grams baking soda
  • 2 eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup/120 ml oat milk
  • 2 peaches, diced into small cubes
  • 20 grams walnuts, chopped or ground
  • 1 tablespoon your favorite sweetener

INSTRUCTIONS

  • Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
  • In a bowl, mix all the dry ingredients. Add the wet ingredients except for the peaches and mix them until a uniform batter is formed. Add the diced peaches to the batter.
  • Grease muffin tins or molds with oil and fill them using a spoon or ladle from the batter. Sprinkle the chopped nuts and sugar on top. Bake for 20-30 minutes until the muffins are golden brown.
