INGREDIENTS
 

  • 4 small almond/corn tortillas
  • 1 apple, chopped
  • 1 tablespoon coconut sugar
  • 1 tablespoon vegan or dairy butter
  • 1 teaspoon cinnamon
  • 2 tablespoons water whisked with 1 teaspoon tapioca flour, or cornstarch
  • Powdered sugar for dusting

INSTRUCTIONS

  • Heat a pan over medium heat and melt the butter. Add the chopped apples, sugar, and cinnamon to the pan. Cook for 5-7 minutes on medium heat, stirring occasionally.
  • Preheat the oven to 350°F (175°C).
  • Pour in the tapioca mixture and cook for another 2 minutes until the apples thicken. Spoon some of the mixture into the center of each tortilla. Fold the bottom over the center, then fold in both sides and roll up the tortilla. Repeat with the remaining tortillas and filling.
  • Brush each tortilla with olive oil or spray with cooking spray. Bake on the top rack for 8-10 minutes, or until the top is crisp. Dust with powdered sugar and enjoy!
