INGREDIENTS
 

  • 3 medium bananas, ripe and mashed
  • 2 large eggs
  • ½ cup/120 grams oat milk
  • ¾ cup/180 grams olive oil
  • ½ cup/170 grams sweetener, honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup/100 grams oat flour
  • ½ cup/50 grams almond flour
  • ½ cup/85 grams chocolate chips
  • cup/40 grams chopped nuts, optional

INSTRUCTIONS

  • Preheat the oven to 170°C (340°F). Grease a 9x5-inch (23x13 cm) loaf pan and line with parchment.
  • In a large bowl, whisk the mashed bananas, eggs, plant milk, oil, sweetener, and vanilla until smooth.
  • Add the oat flour, almond flour, baking powder, baking soda, and salt. Fold gently until just combined; avoid overmixing.
  • Fold in chopped nuts and chocolate chips if using.
  • Pour the batter into the prepared pan and smooth the top. Bake for 40–45 minutes, until a skewer inserted in the center comes out dry with a few warm crumbs.
  • Cool in the pan on a wire rack for 15 minutes, then lift out using the parchment and cool completely before slicing.
