INGREDIENTS
 

  • 1 medium cauliflower
  • 2 tablespoons sesame seeds

Sauce:

  • cup olive oil
  • ½ cup your favorite peanut butter
  • ½ teaspoon salt
  • 1 teaspoon curry powder
  • ½ teaspoon garlic powder (optional)

INSTRUCTIONS

  • Fill ½ a pot with water, add 1 teaspoon kosher salt and bring to a boil.
  • Add the cauliflower to the pot stem part facing up. Cook uncovered for 15 minutes, or until the you can easily stick a knife in the cauliflower.
  • Preheat the oven to 355 °F. (180 °C).
  • Whisk all the sauce ingredients in a bowl, place the cauliflower on a sheet pan lined with parchment paper.
  • Brush the cauliflower with the sauce and sprinkle the sesame seeds.
  • Bake for 45-60 minutes, until beautifully golden.
