Grill the manouri cheese block on a griddle pan or panini press with olive oil for about 30 seconds on each side.
Spread a filo sheet on a flat surface, brush it with a tablespoon of butter, and sprinkle some thyme. Repeat this step once more and then cover with the third filo sheet.
Place the fig slices in the center and the manouri cheese on top, fold the filo to cover, and fasten along the side of the cheese.
Bake for 15 minutes, or until golden.
Drizzle honey, sprinkle a little thyme, and serve.
