Chop the onion and parsley in a food processor, transfer to a bowl, and mix all the chicken ball ingredients together. Roll the mixture into balls with wet hands and set aside.
Heat a deep pot with 4 tablespoons of olive oil. Add the onion and fry until lightly browned, then add the vegetables and spices. Mix and add water until 3/4 full. Cover and cook over high heat until boiling.
Reduce the heat and add the chicken balls. Cook for 30 minutes over medium heat.
Garnish with fresh parsley or add your favorite noodles.
