If using large tortillas, cut out circles to the desired size.
In a bowl, mix all the meat ingredients together. Place the mixture in the refrigerator for at least an hour to rest.
Fill the tortillas with the mixture and fold them in half. Brush the tortillas with olive oil on both sides. Sear in a pan, Ninja, or on the grill until well browned on all sides. Serve with the roasted vegetables and tahini.
