INGREDIENTS
 

  • 2 cups/473 milliliters plain yogurt
  • ½ cup/118 milliliters cucumbers, grated
  • 1 tablespoon dill, chopped
  • 1 tablespoon mint, chopped
  • 1 teaspoon thyme
  • 1 tablespoon parsley, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 garlic clove, crushed
  • A pinch of coarse salt
  • A pinch of ground black pepper

INSTRUCTIONS

  • Combine the yogurt, grated cucumbers, chopped dill, mint, thyme, parsley, lemon juice, olive oil, and crushed garlic in a bowl and whisk.
  • Taste the sauce and adjust the seasoning by adding salt and black pepper as needed. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

RECIPE NOTES

Before serving, stir the sauce and drizzle some extra olive oil on top for a finishing touch.
