INGREDIENTS
 

  • 1 pound sushi-grade skinless salmon fillet, cut into ½ inch (1 cm) slices
  • 1 mango, cut into ½ inch (1 cm) slices

Sauce:

  • 4 tablespoons olive oil
  • ½ lime
  • 2 passion fruits

Toppings:

  • 20 micro basil
  • Red chili flakes

INSTRUCTIONS

  • Arrange the salmon slices in a row on a large plate and add the mango slices in between.
  • Cut the passion fruits in half and scoop out the pulp and seeds into a bowl. Add the olive oil and lime juice to the bowl with the passion fruit pulp and seeds. Mix the ingredients together to create the sauce.
  • Drizzle over the salmon and mango slices. Sprinkle some red chili flakes and add the micro basil leaves. Serve immediately.
